Can Freezing Bread Lower Its Glycemic Impact?
Yes—freezing bread before eating it can actually reduce its impact on your blood sugar. This surprising benefit comes down to how freezing alters the structure of starches in bread.
What Happens When You Freeze Bread?
When bread is frozen and then reheated (especially toasted), some of the starches in the bread undergo a transformation. They become what’s known as resistant starch—a type of carbohydrate that resists digestion in the small intestine. Instead of being quickly broken down into glucose (sugar), resistant starch behaves more like fiber, slowing digestion and leading to a lower glycemic response.
What the Research Says
Several peer-reviewed studies support this effect:
A 2008 study in the European Journal of Clinical Nutrition tested white bread in four forms: fresh, toasted, frozen and defrosted, and frozen then toasted. The frozen-then-toasted bread produced the lowest glycemic response, significantly lower than fresh bread.
A 2023 study published in Novelty in Clinical Medicine confirmed that freezing and reheating white bread led to a slower rise in blood sugar in healthy individuals. The researchers attributed this to the increase in resistant starch after freezing.
